In a town such as Hervás that is so popular with tourists, it is always encouraging to find a restaurant like this offering contemporary dining but without completely sidelining traditional cuisine. Located along a pedestrianised street in the centre of town, it boasts a summer terrace, a bar counter, and a dining room on two floors. They offer updated traditional cuisine that always celebrates Valle del Ambroz produce, with a seasonal menu (notable for its fish of the day) and two tasting menus (L and XL). What to try? Don't miss the crispy suckling pig, confit with orange aroma, or one of th

If the prospect of a short food-themed country break appeals to you, this restaurant in the north of Cáceres province is the perfect destination. It is rare to find refined cuisine of this level in such a small rural village, so Versátil will definitely come as a pleasant surprise, hence our recommendation to book ahead. Fronting the project is Alejandro Hernández, alongside his brothers Jesús David and José Luis who are in charge of the dining room. Alejandro worked under the renowned Martín Berasategui, where he acquired the culinary skills that he now showcases in this eclectic yet welcomin

On the banks of the Alardos gorge, restoring a mill that exudes pure authenticity, with stone walls, this establishment is a tribute to peace and quiet. There is a good bar area at the entrance (with a fireplace and curious-looking tables that reuse old millstones) as well as a simple dining room, both spaces with a warm rustic feel. What’s on offer? A bistro-style menu (starter and main course only) as well as a surprise tasting menu with clear traditional foundations and a modern touch, and a commitment to fresh vegetables from the area. Try the natural wines from small producers!

A unique restaurant in a beautiful natural setting within the walls of an authentic castle. Its traditional à la carte showcases a contemporary touch in signature recipes such as the traditional mashed potato dish known as “revolconas” served with pork tongue, fried bacon and green peppers, and the delicious “Charra veal” oxtail meatballs stuffed with chestnuts. A daily menu is also available midweek between October and June. Take advantage of your visit to explore the local interpretation centre on medieval and monastic life.

A family-run restaurant with rooms available for those guests keen to explore the beautiful La Vera region. It is run by two siblings, Pilar and Víctor, who have taken over the reins here with both enthusiasm and dedication. They offer an à la carte service with daily recommendations (such as black pudding fritters with green chilli foam or aubergine with miso), a set menu (lunch only, weekdays) and two tasting menus: La Finca, serving 8 courses, and Villa Xarahiz, serving 13 courses (both are available by reservation only, in a separate, elegantly appointed dining room). Considered to be one of the most beautiful pueblos in Spain, Mogarraz is a medieval village nestled in the heart of the Parque Natural de Las Batuecas-Sierra de Francia. Here, the Mirasierra restaurant, which has been in business for over five decades and boasts an exterior in perfect harmony with the buildings around it, is a good option in which to recharge your batteries. Here, you can choose between the traditionally inspired à la carte (on which the stews and roasted and grilled dishes stand out) and a tasting menu option. Enjoy stunning views from the rear dining room.

This house, located in the heart of Campo Charro, has been in the hands of the same family... since 1916! Here, each dish is a tribute to the land and the efforts of those who cultivate or work it, always with great dedication and an unequivocal dose of passion. The chef at the helm, Cristina Martín, builds her proposal around the best produce, seasonality and the authenticity of the flavours that come from nature, so that we can enjoy gastronomy in its purest state!

A colourful yet unassuming eatery with a kitchen adjoining the dining room. The chef, who has worked in several leading restaurants and has a strong focus on presentation, showcases his talents via a traditionally inspired menu which is particularly designed for sharing. It features modern, fusion-inspired influences that take the palate on a journey around the world through dishes such as tomato “torrija” with smoked sardine, veal cheeks with papaya etc.
