An unusual setting for a restaurant: what was, in the 1970s, a municipal swimming pool, with raw concrete and colourful neon lights, has been converted into a bustling collaborative space. It is where Enzo Scaramuzzino, former right-hand man of Mathieu Pacaud, is swimming solo after clocking up experience in MICHELIN-starred kitchens. Every week, the short menu is written up on the blackboard – think cuttlefish fricassee, truffle risotto, farm-reared pork rack… Classics revisited without ostentation, impeccable jus and a fabulous béarnaise sauce on the rump steak, fresh and fruity desserts, su

In the heart of this charming borough, on a pedestrian square near the town hall, a pocket-sized restaurant run by a young chef with an impressive cv. Market-inspired menu with the likes of fresh pasta with mussels, calamari and langoustines, or poultry quenelles with freekeh... Scandinavian style dining room, terrace overlooking a fountain. Delicious prices.

What are two Australian chefs (with stints at Yard, Spring, Bones and Au Passage) doing in the heart of the grounds of Saint Vrain Castle, more precisely in the tastefully refurbished former stables? Well, they are knocking up spot-on food, sourced directly from the estate’s huge cottage garden, which actually existed before the restaurant, using fruit and vegetables that are harvested only when perfectly ripe. A fine dining experience that mingles rural charm and gourmet delights, overlooking the surrounding countryside. Guestrooms available for overnight stays. Booking compulsory.

This former coaching inn run by Yohann Giraud, a chef who has worked in several Michelin-starred restaurants, has a pleasantly hushed atmosphere. On the menu: dishes bursting with flavour, such as the signature macaroni stuffed with foie gras, celeriac and tartufata au gratin with parmesan, cream and a veal jus, or the oh-so-delicate millefeuille with a caramel sauce. The charming service completes the picture.

This restaurant is housed in a contemporary building in the heart of the Marché de Rungis – the largest fresh produce market in the world – and is run by chef Nicolas Sale, who is no stranger to MICHELIN. Occupying the middle of the space is a large open kitchen surrounded by varnished oak tables and contemporary banquettes. The menu, dictated by the day's consignment, shows a penchant for putting a new spin on the classics: beef terrine with chanterelle pickles, pollock, vegetable casserole, mashed potatoes, mirabelle plum tart and buckwheat ice cream. The sharing dishes are generous and made
