Sushi Shunei
Japanese, Sushi · ★ Michelin
€€€€
Located on Montmartre’s hill, this joint sports an elegant, minimalist interior that celebrates the aesthetic codes of Japanese restaurants: light wooden furnishings, a long counter and an amazing origami-inspired ceiling by an interior design firm. Chizuko Kimura and the Sushi master Takeshi Morooka pursue the legacy of Shunei Kimura, who made this eatery such a success. The omakase menu comes in two versions, which must be chosen when you book. Both embark the diner on a genuine sensorial experience courtesy of razor-sharp nigiris, a truly exceptional selection of fish, expert handiwork and

In a lively, working-class enclave, this place serves good contemporary cuisine. Talented chef Thibaut Spiwack, whose CV includes Michelin-starred kitchens, finds original ways to showcase produce from the Paris region. The emphasis is on sustainable development and a desire to challenge the codes of gastronomy. Attractive set menu plus a few à la carte options at lunchtime; in the evening, a single set menu with several courses. A moment of gastronomic pleasure.

Maison Dubois
Modern Cuisine · ★ Michelin
€€€€
The house spirit reigns supreme in this intimate fine dining restaurant with six tables and a confidential feel. Suffice to say, chef Arthur Dubois – who has clocked up experience in the restaurants of Jacques Maximin, Éric Frechon and Pierre Gagnaire, where he was sous-chef for several years – is in the business of the bespoke. Carefully selected ingredients, tried and tested know-how, impeccable technique: the chef is a dab hand at putting a new spin on classic cuisine. Indeed, the influence of his mentor on rue Balzac makes itself felt in his penchant for "satellite" variations on a theme,

Sushi Yoshinaga
Japanese · ★★ Michelin
€€€€
This exceptional restaurant has left nothing to chance: ceramics designed by a Japanese artist, rosewood chopsticks set out on a small cedar tray, maple wood panelling and soft lighting. Sushi master Tomoyuki Yoshinaga crafts a feast of outstanding fish, including different varieties of fatty tuna, which he surgically prepares and seasons – all for the benefit of no more than 10 diners at a time. This culinary performance of high-flying precision covers textures, maturations, serving temperatures and a vast array of flavours depending on the omakase menu. Le Bristol is the quintessence of luxury, from its spa suites and superb formal garden to its rooftop pool and dining area with Louis XVI furnishings, mirrors, and tall French windows looking out onto the greenery. In the kitchen of the flagship restaurant, Arnaud Faye errs towards minimalism with his light and refined preparations – a purity of flavours that does not preclude generosity in the dishes. The ingredients are of course excellent, the cooking techniques and temperatures flawless; the bread is made on the premises from heirloom wheat varieties, the sauces are light yet highly concen

Le Grand Restaurant - Jean-François Piège
Creative · ★★ Michelin
€€€€
Welcome to Jean-François Piège's "laboratory of great cuisine", a tiny dining area beneath a sculptural ceiling made up of panes of glass that catch and reflect the light. The chef gives full expression to the scope and breadth of his experience and know-how, executing timeless signature cuisine that finds its source in the annals of French gastronomy (the chef is said to own one of the finest cookery libraries of Paris). There is no carte but a tasting menu that tours the regions of France and revolves around Piège’s "mijotés modernes". This consummate chef demonstrates his creative talent an

Le Gabriel - La Réserve Paris
Creative · ★★★ Michelin

Just a well-heeled step from the Champs-Élysées, this restaurant is set in the swish, swanky La Réserve, a 19C Napoleon III-style mansion refurbished by renowned interior designer, Jacques Garcia. The dining room is clad in magnificent materials, such as Spanish gilt leather and Versailles parquet flooring. Jérôme Banctel affirms his distinctive culinary personality with two tasting menus: "Virée", a tribute to his native Brittany, and "Périple", an invitation to travel the world – taking in Japan, as well as Turkey, where the chef discovered the incomparable textures produced by cooking in li

Stéphanie Le Quellec makes no secret of her aim to "deconsecrate haute cuisine" courtesy of a generous gourmet ethos in which each dish tells a story. Her menus, which are comprised of varying numbers of courses, or "acts", may appear simple but every last detail has been endlessly puzzled over and her big-boned sauces are often enhanced by vintage sherry vinegar. Among her signature dishes is an iconic red mullet, the recipe of which she is constantly tweaking. The vibe is casual, both in the kitchen and dining room, and diners are invited to enjoy the present moment to the full. Warm seamles
