The Japanese Restaurant

Japanese Contemporary, Fusion · ★★ Michelin

€€€€

In the sleek and chic restaurant of the luxury hotel The Chedi, at almost 1 500m above sea level, twin brothers Fabio Toffolon and Dominik Sato share the helm in the kitchen. Working with first-rate ingredients, they present an intriguing blend of Japanese cuisine and European influences in the form of a five- or six-course omakase menu or as a complete eight-course culinary journey. The latter includes the two signature dishes – one featuring wonderfully tender langoustine, the other top-quality Ozaki Wagyu A5 – which can be added or swapped into the shorter menu. Alternatively, a vegetarian

Another member of Andreas Caminada's IGNIV family. Designed by Patricia Urquiola, this restaurant in Andermatt's Reuss district showcases impeccable taste and modern elegance, with artwork by Gina Fischli, David Renggli and Philip Taaffe adorning the walls. Chef Valentin Sträuli, a young talent, who trained under Andreas Caminada and previously worked in the kitchen at Schloss Schauenstein, maintains allegiance to the IGNIV tradition while weaving in his own culinary vision. The result is extremely intense and punchy dishes, such as the super-fresh whitefish cut into fine strips and marinated

Working in tandem, twin brothers Dominik Sato and Fabio Toffolon create classic Japanese cuisine with subtle European influences. This restaurant high up on the Gütsch mountain (2 344m above sea level), after which it is named, can be reached on the Gütsch Express cable car – hop on at the lower terminus (departing from Andermatt railway station). Chef Markus Neff and his team, along with the restaurateur trio of Müller, Gruß and Neumüller, put their heart and soul into this venture. The best place to sit is on the spectacular terrace – you could even call it a viewing platform! And if the weather isn't playing ball, it's just as pleasant to sit inside. The decor is modern and simple, which is entirely in keeping with th

The journey up to the village of Gurtnellen, at an altitude of 935m, is well worth it! Chef-owner Beat Walker is the fifth generation of his family to run this charming restaurant dating back to the 19C. He is assisted by Roland Gloor, who takes excellent care of diners. Behind the wooden shingle façade that is typical of the region, the atmosphere is inviting, from the Gaststube on the ground floor to the elegant wood-panelled Urnerstube on the first floor. There is also a beautiful terrace with mountain views. At lunchtime, there are à la carte dishes (eg trout with Siiwgagglä (fried potatoe
