Both the ‘Seasonal’ and shorter ‘Selection’ menus feature highly accomplished dishes cooked over open flames, such as squid with Noir de Bigorre lardo, white icicle radish, coriander blossom and green cardamom jus or blue-shelled lobster with fig, turnip and saffron.
