A culinary experience in every sense! From the moment you enter you are guided through a surprising sequence of flavours and sensations that include stunning appetisers in the garden and the Living Lab, a collaborative space in which the restaurant grows and revives native species that are almost extinct (’Ciezana’ aubergine, ‘Flor de Baladre’ tomato, cowpea, etc.). You then continue to the spectacular modern dining room with its surprising setting in a huge thatched hut. Here, you savour main dishes, with fantastic dishes such as Panaché of vegetables and langoustines (a wonderful tribute to

A restaurant, with plenty of character, which extols the virtue of Mediterranean cuisine without closing its eyes to influences from elsewhere and which pulls out all the stops to ensure an authentic gourmet experience. Behind its floor-to-ceiling windows, the impression is of a young and contemporary eatery on two floors with a focus on market-inspired cuisine, featuring classic food pairings with an unfettered global approach. Chef Juan Guillamón allows himself full licence to introduce flavours acquired on his travels: for six seasons he worked as a chef for the Ferrari motor racing team, a

This centrally located restaurant opposite the church of San Lorenzo, in an attractive venue that catches the eye with its towering arch and exposed brick walls, gastronomy is viewed as its own language and each of its dishes as a sentence ('frase' in Spanish) that tells a story which, where possible, is connected to personal memories and local history. The project is headed by María Egea and Marco Antonio Iniesta, with the former in charge of the front of house and the latter the kitchen. The elegance with which the concepts of roots and tradition are brought up to date comes as a pleasant su

Albacete, which has been known as the New York of the La Mancha region since the time when the Spanish writer known as Azorín coined the term in one of his poems, boasts an enticing gourmet focus thanks to the Ababol restaurant, which is the Spanish word for a type of red poppy. In its contemporary dining room, overlooked by the open kitchen, chef Juan Monteagudo conjures up dishes which showcase the traditional roots of La Mancha, select ingredients (many from its local farms), and sublime sauces that you’ll want to mop up on your plate! The French technical detail on display is influenced by

If you enjoy cuisine rooted in the local terroir, this restaurant, part of the rural hotel of the same name and located 1km southeast of Torre de Juan Abad, will definitely appeal, thanks to surroundings which provide it with its inspiration. The “gastronomic” dining space (there is a second more traditional dining room called Origen) features lots of natural light and pleasant vistas of the La Mancha countryside. Chef José Antonio Medina’s cuisine, which starts with two series of appetisers (first by the room with the open fire, and then at the bar, where they are served by the chef himself),

The López sisters, with Irene in the kitchen and Eva in charge of front of house and wine, surprised us in this centrally located aristocratic property, the former family rooms of which been transformed into comfortable, classic-style dining rooms. The chef, who previously studied chemical engineering, has taken advantage of her knowledge in this field by applying the principles of molecular reactions to her recipes, which are unsurprisingly based around local ingredients. On the à la carte, which is complemented by two tasting menus (Origen and Inspiración), you’ll find unmissable dishes such

Part of the Señorío de Barahonda estate, with views of the surrounding vineyards. Here, in the shape of two tasting menus (Caliza and Arcilla), chef Alejandro Ibáñez showcases cooking from the local terroir (albeit through more modern eyes) that is based around ingredients sourced from the local area and his own garden (we particularly liked the pigeon royale and liver flan, as well as the grilled aubergine with Jerusalem artichoke ice-cream, caramel and pine nuts). To enjoy the experience to the full, we suggest joining the wine tour before you eat.

If you’re looking for something different you’ll find it here, as the focus of the couple in charge (María and Miguel Ángel) is on fusion cooking that combines the flavours of India, Morocco, France, Japan etc. The spacious restaurant, in the central Plaza de San Juan, as well as an unmistakeable appearance thanks to a striking yellow door that provides access to this relaxed bistro. The à la carte, with its strong focus on sharing, is surprising for its so-called “Bocados del Mundo”, which are complemented by a section entitled “Algo más Serio” (Something More Serious, featuring some of their
