The Japanese Restaurant
Japanese Contemporary, Fusion · ★★ Michelin

In the sleek and chic restaurant of the luxury hotel The Chedi, at almost 1 500m above sea level, twin brothers Fabio Toffolon and Dominik Sato share the helm in the kitchen. Working with first-rate ingredients, they present an intriguing blend of Japanese cuisine and European influences in the form of a five- or six-course omakase menu or as a complete eight-course culinary journey. The latter includes the two signature dishes – one featuring wonderfully tender langoustine, the other top-quality Ozaki Wagyu A5 – which can be added or swapped into the shorter menu. Alternatively, a vegetarian

IGNIV by Andreas Caminada

Another member of Andreas Caminada's IGNIV family. Designed by Patricia Urquiola, this restaurant in Andermatt's Reuss district showcases impeccable taste and modern elegance, with artwork by Gina Fischli, David Renggli and Philip Taaffe adorning the walls. Chef Valentin Sträuli, a young talent, who trained under Andreas Caminada and previously worked in the kitchen at Schloss Schauenstein, maintains allegiance to the IGNIV tradition while weaving in his own culinary vision. The result is extremely intense and punchy dishes, such as the super-fresh whitefish cut into fine strips and marinated

The journey up to this enchanting mountain village is something of an adventure, but the food makes it worth it! In a rustic chalet-style setting, diners tuck into flavoursome regional dishes prepared with seasonal produce – the chef is always happy to showcase Swiss ingredients. The menu features mouthwatering options such as "Mario's Signature Black Forest" (beef sirloin, sour cherries, cocoa, kirsch 40% volume) and the "Alpen Tapas" starter. Friendly and charming front-of-house team.

A real bastion of local cuisine for over 60 years thanks to the hard work of an entire family. The menu features mountain-style cuisine, including game dishes, a small selection of local cheeses (we highly recommend the Bettelmatt) and home-made ice cream. Relaxed and informal ambience.

The Ossola gastronomic atelier offers a safe harbour for lovers of good food and drink in the town centre. The Bartolucci family's tradition has soared thanks to dynamic chef patron Giorgio and entrepreneurial sister Elisabetta, joined by Katia, whose smile and professionalism are invaluable to guest comfort. In addition to the welcoming service, the cuisine beckons clientele from afar. The evening menu is packed with revisited Ossola citations (among others, gathered in the tasting menu "Flavours and Aromas of the Mountains") alongside contemporary Italian culinary nods. Chef Campanella offers highly personalized cuisine, with a keen focus on the simplicity of raw ingredients and on pairings – an approach shaped by his countless travels around the world and enriched with an indispensable Mediterranean touch from his Italian heritage. The two menus remain unchanged and are executed with masterful perfection: Moving Mountains (vegan) and Ispirazione (with fish and meat). Guests can choose from five to eight courses. The wine list is sure to meet the expectations of the most discerning connoisseurs, who can also engage with the knowledgeable sommelier. In the war

Diners are assured of a pleasantly informal atmosphere and great food at this little inn run by Yvonne and Lars Dederscheck on the outskirts of Niederernen. Their dishes are inspired by modern culinary trends and made using the freshest select ingredients. Think lukewarm char, celeriac, apple and horseradish, or duck breast, pulled duck leg, Jerusalem artichoke and kale. A fine à la carte selection is available, along with a three- to seven-course set menu and a three- or four-course vegetarian set menu s. Valais wines are recommended as an accompaniment. In the refined gourmet restaurant of the “Giardino” hotel, Reto Brändli has taken the helm of the kitchen, succeeding Rolf Fliegauf. With a culinary style that is essential yet sophisticated, technically flawless and rich in nuance, he successfully continues the restaurant’s tradition. The excellence of the ingredients is evident in dishes such as South African lobster served with mango, coconut, and kaffir lime. The service, impeccable in expertise, courtesy, and elegance, helps make the experience truly memorable. All of this is framed by a sophisticated setting, enhanced by a wall decorated
