Their gutsy indulgent cuisine is unveiled in an inspired, big-boned surprise menu, illustrated by a delicate pannacotta of white asparagus with radish-flavoured ice cream or a fillet of seabream escorted by chickpea fritters and a creamy jus of smoked herring roe.
