Inside this Scandi-cool RiNo dining room, find a striking counter where Chef Duncan Holmes oversees a focused team that's hard at work and cool under pressure. Diners choose from several menus, and in all cases, expect a true commitment to the seasons, soigné presentations and tightly honed flavors. Vegetables are often a highlight, as in a porridge of Calrose rice with pickled hedgehog mushroom and crispy yuba. Seared duck breast with parsnip and black truffle is spot on. Desserts are especially captivating, like a memorable chocolate finale with a lacy cocoa nib tuile, pomegranate jam and nu

This hip counter from the Id Est Hospitality Group is tucked away in the Dairy Block's Free Market. Chef Byron Gomez leads this team that takes a serious approach to locality and seasonality, including a dedicated fermentation program that highlights both grains and produce. The mastery of the hearth as the primary cooking implement infuses each of the tasting menu's courses with distinct notes. The menu, which incorporates Japanese and Nordic elements, is wholly original and offers a clear narrative embodied in dishes like sea urchin with butternut bisque and pickled squash or, perhaps, a war

La Diabla Pozole y Mezcal

Mexican · Bib

This Larimer Street spot from chef Jose Avila is no fuss and no frills but all heart. Inside, it's equal parts cozy and colorful with dark, unpolished wood floors and vibrant walls. In case the name didn't give it away, pozole is the star of the show. They feature the typical rojo and verde broths as well as white, black (with a smoky char from roasted chilies) and vegetarian—eschewing pork for mushroom and chayote. It's an impressive take on a Mexican staple. Customize the protein and opt for the tender and flavorful pork, and order a mezcal from their extensive selection. Should pozole not c

Mister Oso

Latin American · Bib

It's laid-back and lively at Mister Oso, a small but stylish spot with a creative menu and clever cooking. Chef/owner Blake Edmunds has a hit on his hands, with a second location opening in recent years. While tacos may be the main event, this isn't your typical taqueria menu. Instead, discover ceviches, salads and dishes bearing Latin American and international influences. Everything is served family style. Pick up a tortilla and start building a delicious treat, as in the smoked lamb cheek tacos with pickled red onion and grilled shishito peppers that's finished with a bright and zesty avoca

Chinese · Bib

What began as a pop-up back in NYC, where owners and married couple Doris Yuen and Kenneth Wan first met, and then became a stall in a Denver food hall, is now at last a full-service restaurant. The winsome, colorful space and the compact menu both celebrate the pair's Chinese American roots, both having been raised by immigrant families who worked in restaurants. Fried crab and cheese wontons and hand-shaped chicken and chive potstickers are inspired by Chinatown favorites and takeout staples, made with particular care and big flavor. Chicken wings with a spicy, tingly málà seasoning are favo

Hop Alley

Chinese, Contemporary · Bib

Hop Alley refers to the original name for Denver's Chinatown, but there's nothing historic about this sleek restaurant. In keeping with the contemporary look, the Chinese menu with Sichuan leanings features modern adaptations of classics. There's plenty of originality and bold flavors, as seen in dishes like gai lan, a dynamic plate of grilled Chinese broccoli with schmaltz and oyster sauce finished with house-made duck salt and crispy shallots. Shrimp toast topped with whipped shrimp and chicken thigh is far from standard thanks to mustard gastrique and tiger vinaigrette. Dan dan mian noodles

Lightning strikes twice for dynamo Chef Johnny Curiel with this parallel concept cheek-by-jowl next to his celebrated flagship. As the name suggests, the small stylish space has a mezcal bar vibe—and a list of inventive, mouthwatering agave spirit-based cocktails to go with it—but it’s also a showcase for Chef Curiel’s culinary talents. Evoking the vibrant creativity of Mexico City’s restaurant scene, the succinct menu is sprinkled with international flavors, as in an herbaceous ceviche of kanpachi that incorporates dill and roasted garlic, or a subtly spiced aguachile of Santa Barbara uni and

Chef Johnny Curiel started off in his family’s restaurant in Guadalajara, and after years of high-end culinary experience, he revisits dishes and flavors from his upbringing with creativity and finely honed technique delivering results that are both satisfying and delicious. Resist the temptation to fixate on any one item, as the menu is littered with treasures. Think beautifully roasted scallops blessed with tomato butter and serrano ponzu or an agave-roasted sweet potato with nutty salsa matcha and luxuriously creamy whipped requesón.
