Raíces-Carlos Maldonado
Creative · ★ Michelin

Chef Carlos Maldonado knows no limits and it is this which characterises his cooking, which is firmly steeped in the flavours and ingredients of La Mancha but which is also open to influences from around the world, as witnessed by the twinning between his beloved Talavera de la Reina and Puebla (Mexico). The restaurant, which could almost pass unnoticed because of its discreet façade, boasts a classic-contemporary decor in varying tones of white, plus an adjoining dining room with curtains hanging from the ceiling that add a more intimate feel to the tables. His tasting menus (Básico and Hecho

At the historic Cigarral del Ángel (a “cigarral” is a typical Toledo-style country house), set in lush gardens on the banks of the Tagus, guests can savour the unusual cuisine of chef Iván Cerdeño, who creates dishes based on memories from the past and seasonality. In them, he showcases the finest ingredients from La Mancha, the distinctive flavours of game from the Montes de Toledo, and colourful produce from local vegetable gardens. He also takes inspiration from the different cultures that have left their legacy here, as well as from the distant seas around the Iberian Peninsula. Pickles, s

Trujillo, commonly known as the town of the conquistadors, reveals a new side to itself if you visit this stone mansion, located in the heart of the old town. The restaurant, which has taken on a new lease of life having passed down a generation, has been modernised and surprises guests with a delightful terrace on an internal patio, where dinner is usually served. Here they prepare traditional Extremaduran cuisine with contemporary innovative touches, in which oak embers are the undisputed stars of the show. It is no surprise that chef Mario Clemente worked for nearly a year at the legendary

Under this intriguing name, which is a celebration of an almost forgotten dish from Extremadura, this simple restaurant attempts to revive traditional regional flavours from a modern perspective. The young duo at the helm, Josemi Martínez and Mercedes Rincón, are embarking on their own personal project here after working in some of the finest establishments, some even outside Spain. Both chefs, who throughout their careers have always been ambassadors for the products of their home region, uphold traditional Extremaduran recipes using modern techniques and the best local seasonal produce, brin

It’s very rare to come across a restaurant such as this one where every mouthful reminds us of our mothers’ and grandmothers’ cooking! Impressively run by three siblings (Aurora, Belén and José), its focus is on traditional La Mancha dishes teeming with flavour and with a strong emphasis on game (venison, red-legged partridge, wild boar etc) and beef from the Sierra de San Vicente. Highlights on the à la carte, which pays tribute to the female members of this family, include dishes teeming with character such as the “pisto manchego”, the fried breadcrumb and egg-based “migas del pastor & Huevo

On the banks of the Alardos gorge, restoring a mill that exudes pure authenticity, with stone walls, this establishment is a tribute to peace and quiet. There is a good bar area at the entrance (with a fireplace and curious-looking tables that reuse old millstones) as well as a simple dining room, both spaces with a warm rustic feel. What’s on offer? A bistro-style menu (starter and main course only) as well as a surprise tasting menu with clear traditional foundations and a modern touch, and a commitment to fresh vegetables from the area. Try the natural wines from small producers!

This simple family-run business, named after the initials of the owners (including their daughter), is a great place to eat if you are visiting the Álvarez de Toledo Castle, home to the first Parador located in a historic building. You'll find a traditional menu with innovative touches, carefully prepared and full of flavour. Our recommendations? The house classic: matured beef ravioli in wonton pasta and truffle cream.

Offering traditional cuisine brought up to date that draws from the recipes of Castile-La Mancha and Andalusia, in this cosy restaurant in Talavera, next to the Parque del Cañillo, chef Piedad Sánchez concocts a menu with nods to both La Mancha and her native Malaga, giving us the option of a journey through the flavours of both regions through its set menus: the one called Ejecutivo (only available at lunchtime from Tuesday to Friday) and another one called Gastronómico. You'll find dishes such as semi-liquid mushroom and truffle croquettes, candied and grilled artichokes with seasonal vegeta
