Chef Ricardo Temiño's latest venture sits adjacent to La Fábrica, but they share the same entrance. It is a space with its own character where he aims to take Burgos' rich gastronomic culture one step further. The experience begins with the first appetisers after the chef's welcome, where the fully stocked wine cellar is located, then he will take you through the kitchen to see how the lamb is matured, and finally to the modern dining room, with a semi-open kitchen. Here, the cuisine, which is more conceptual and typical of modern market culture, is brought to life through two tasting menus (C

The gourmet outpost of chef Miguel Cobo shares some of its facilities with the Cobo Tradición restaurant, with both eateries part of the same modern, spacious and centrally located gastronomic space called Cobo Estratos. The famous Parque Arqueológico de Atapuerca, located a little more than 20km from Burgos, has provided the inspiration and leitmotiv for this celebrity chef on a single yet extensive tasting menu (Humanidad) with no little creativity. His cuisine takes the palate on an incredible journey through the different stages of human evolution and explores the relationship with our sur

Chef Ricardo Temiño’s restaurant, located next to the San Juan civic centre, boasts an elegantly minimalist interior which provides the backdrop for high-quality contemporary cuisine teeming with flavour and inspired by traditional and international recipes. The à la carte includes an option to order small plates and dishes for sharing, enabling guests to discover many different dishes. This is complemented by a constantly changing menu called Temporada (Season), which is only available for lunch from Tuesday to Friday. An adjoining dining space (Ricardo Temiño), but with the same entrance, of

Cobo Tradición is located in the medieval heart of the city, just a few metres from the emblematic 15C Casa del Cordón. Here, as part of a complex called Cobo Estratos, you’ll find an interior with an avant-garde design where the striking staircase and kitchens (also home to the award-winning Cobo Evolución) are the two standout features. The à la carte of traditional dishes has been brought impressively up to date and includes classics such as grilled and fried “morcilla de Burgos” (black pudding) with roasted peppers and sea salt, and the superb braised scallops with herb oil and Iberian por

This eatery, in the premises occupied in its early days by the La Fábrica restaurant, brings a new dining concept to our palates via award-winning chef Ricardo Temiño, who combines Italian cooking with the essence of Castilian cuisine. In its attractive dining room, featuring a striking look dominated by tones of red, choose between the à la carte and two menus (Fellini and Sophia Loren). Dishes appearing on these include artichoke with “anticarbonara” and smoked eel; cod with a pilpil sauce; and caramelised panettone “torrija”.

Sitting next to the motorway, a few miles from Burgos via the southern exit of the city, this restaurant is a great option if you are a fan of grilled meat and value quality. It's no surprise that chef Guillermo Martínez de Marigorta was recognised as Spain's Best Grill Master in 2024. It is located inside the hotel of the same name, featuring a large café and a dining room divided into two spaces, one for the daily set menu and the other, with the grill on display and the chef working live, for the à la carte service. The enormous ageing chamber, with premium beef and ox meat, is particularly
