Caino
Tuscan, Contemporary · ★★ Michelin
€€€€
Nestled in the heart of a charming Tuscan village, Caino is the gravitational centre of Maremma cuisine, with Valeria Piccini its finest interpreter: a skilful seeker of superior materials from a generous territory (which, along with a lovely vegetable garden, produces its own olive oil and some wines), later reimagining them without compromising an ounce of flavour—as in the delicious lamb ravioli or the pigeon stuffed with mashed potatoes and its entrails. For those craving a touch of the sea, there's an excellent risotto featuring cardoncelli mushrooms, lovage, and langoustines or amberjack

I Due Cippi dal 1976
Meats and Grills, Classic Cuisine
€€€
Upon entering, guests are welcomed by an evocative crackling fireplace, beside which aged meat is cooked to perfection. The varieties offered come from the world’s finest regions and sustainable farms, including prized wagyu. Chianina naturally takes center stage, but the menu extends to game as well, offering a wide range of authentic flavors. The elegant dining rooms, which have gained charm and refinement over the years, are the result of management that began in the 1970s and is now more vibrant than ever. A warm atmosphere, attentive service, and a selection of prestigious labels complete

Agriturismo Il Cavallino
Country cooking, Tuscan
€€
A property located in a very peaceful setting within an organic farm stay. The management is driven by great passion: he works in the kitchen, carrying forward the family business tradition; she manages the dining room with grace and attention. The recipes offered are tied to the territory, with dishes that are generous, flavorful, and colorful, showing particular attention to the lightness of the preparations. The quality of their organic extra virgin olive oil is particularly noteworthy.

La Filanda
Tuscan, Modern Cuisine
€€
Situated in the heart of the historic centre, this restaurant occupies an old spinning mill ("filanda") that has been completely restored without losing any of its original charm. Here, self-taught chef Barbara serves traditional dishes reinterpreted with real flair, such as the involtino di ciaffagnone filled with Maremma beef on a bed of melted pecorino cheese and crispy leek. The chef’s husband oversees the wine list, which includes a selection of Tuscan labels.

L'Uva e il Malto

€€
A talented couple run this modern, intimate restaurant with a wine-bar right in the town centre. Fish takes pride of place on the menu, with the catch of the day announced at your table, including delicious shellfish. The female owner oversees the extensive wine list, which features reasonably priced and mostly Tuscan labels.

Canapone
Classic Cuisine, Seafood
€€
In classic settings embellished with many plants and customised by the porphyry floor, while in warm weather we move to the outdoor area overlooking the splendid Piazza Dante, in any case they serve Maremma cuisine of excellent fragrance and based on impeccable raw material, both fish (our suggestion goes for the steamed catch of the day with vegetables and freshly made mayonnaise) and meat. Next door, Osteria Canapino offers a more streamlined and informal cuisine.
