Sushi Saint

Mike Collantes, Chef/owner of Soseki, has another hit on his hands with Sushi Saint. Attached to a brewery but with a separate entrance, this downtown temaki spot lures guests with its lounge-y vibe and contemporary design. The team take great care in sourcing high-quality rice and nori for their cone-shaped temaki, and while the hand rolls take center stage, their small plates, like Sichuan cucumbers with chili crunch, are worth trying. From the avocado with serrano lime miso to aburi-style scallop with brown butter to shredded snow crab with truffle, cucumber, and finger lime, the temaki off

This intimate operation by Chef Mike Collantes is a prime example of an omakase that blends traditional and contemporary elements seamlessly. The counter is lit like a stage, with bright spotlights, dark walls, sleek wood floors, and ten plush seats. The smaller courses are ever-evolving thanks, in part, to a genuine commitment to local Florida produce. Previous highlights include Scandinavian-style sashimi, pan-seared scallop with cauliflower and caviar, and corn chawanmushi. As for sushi, expect a faultless progression of warm, vinegared rice paired with a wonderful selection of fish, each o

Husband-and-wife team Mark and Jennifer Berdin helm this intimate eight-seat counter, which began as a small market stand before evolving into an eight-seat tasting-menu experience. The atmosphere is relaxed and personable, with Chef Berdin preparing each course directly in front of guests, balancing focus with an easy warmth. Expect a generous progression that moves from composed small dishes and pristine sashimi into a carefully paced nigiri sequence, built piece by piece with warm rice and clean seasoning. A thoughtful fish-based ramen and restrained desserts round out a meal that feels bot

Set within the Mills Market, this casual concept from Chef/owner William Shen (and named for his pup, Uni) draws a line before it's even open. Everyone is clamoring for a taste of their onigiri, on offer until they sell out. The menu is a moving target, with ever-changing availability alongside a host of daily specials like a Japanese curry hash brown. Made and served in sealed bags, the classic triangles are best eaten while still warm. It's all spot-on, whether filled with a crispy fried chicken thigh or tuna enlivened with mustard. Unagi is a fan favorite, with cubes of barbecued freshwater

Located inside Mills Market, Bánh Mì Boy brings a Vietnamese look, feel, and flavor to this food hall. As the name suggests, bánh mì, or sandwiches, are indeed the focus (try the crispy pork belly with roasted garlic mayo and house patė on French bread for a deeply savory and satisfying meal). It's not just about the classics, though, and fusion finds include a French dip with a side of pho broth, as well as a Vietnamese-style cheesesteak. The create-your-own summer roll option is undoubtedly one of their most appealing options, with the ability to pick from a variety of proteins (think pork b

This sleek, Mills 50 eatery is located in the same strip as the Tien Hung Market. With an upbeat playlist and an attractive dining room, the restaurant specializes in chewy noodles made from wheat sourced from Japan’s Kagawa Prefecture. Ikura, tempura and top-notch ingredients like Hokkaido uni and A5 Kagoshima wagyu pair with broths of wonderful smokiness and depth. Starters like tatsuta-age (fried chicken) and yaki gyoza (pork dumplings) are familiar and reliable, but consider opting for the ikura onsen, which features a softly poached egg crowned with crispy garlic. Either way, expect preci

Husband-and-wife duo Alda and Joe Rees are behind this corner spot nestled within an Art Deco building. Its menu, displayed on the front windows, invites passersby inside to a space that may be short on real estate but utterly captivates with mint-green walls and Mason jars that hang above the glossy tiled bar.The seasonal American menu brims with nostalgic Southern inspiration, and presentations are dialed back to let ingredients shine. From local tomatoes to fresh citrus, dishes exude a homey sense. To wit: chilled shrimp is a wonderful contrast against hot fried green tomatoes, while cobia

Chef Ryan Ratino's lauded D.C. restaurant, Jônt, is more than just the inspiration for this offshoot. This Winter Park restaurant echoes that spirit and sensibility (think classic French techniques married with pristine Japanese ingredients), albeit with a few Florida touches. The larger space allows for discrete moments at each meal, while three tasting menus run the gamut from tightly edited and more affordable to loaded with luxury ingredients. No matter the selection, expect refined dishes punctuated by the seasons, as in chawanmushi with an autumnal twist of braised sweet potato, kombu, a
