Farm to table, Modern Cuisine · ★ Michelin

The many positive adjectives that can be used to describe the Trafoier family can be summed up by simply saying that they are unique! Their individual talents come together in the natural and engaging welcome they offer guests, demonstrating a warmth and professionalism that is typical of the Kuppelrain experience. Chef Kevin, who is as skilful as his father Jorg (now front of house), demonstrates precise, excellent techniques in his search for comforting and appealing flavours that bring out the full flavour of his ingredients with no frills or unnecessary fuss. The family that run this restaurant occupying an old farmhouse with origins dating back to the 16C has a relationship with the region that goes back decades. In later years, the farm became an inn and it has now been run by the same family for five generations, all motivated by a desire to introduce their guests to the best local recipes and ingredients. Dishes include excellent fresh ravioli stuffed with cheese produced in the nearby valley and served (in summer) with tomato and basil sauce. An excellent wine list and the hotel’s warm and friendly ambience add to the appeal.

Run with passion by the two owners who continue the long family tradition in this hotel-restaurant is one of the most picturesque sights in the Val Senales. Its beautifully kept dining room is romantic and typical of the region, providing a backdrop for just a few dishes which are prepared by the chef with a focus on local ingredients. A hint of Mediterranean influence adds to the appeal.

Occupying a former post-house, this restaurant boasts dining rooms decorated in Tyrolean style, as well as a large veranda-style room. Although the focus here is on local ingredients (especially vegetables and meat such as goat kid and lamb raised on the restaurant’s own farm in the Senales valley) and freshwater fish, the menu also features the occasional Mediterranean speciality, such as the excellent braised aubergine tartare with burrata, focaccia and basil-flavoured olive oil. There’s also a hotel of the same name, which is housed in an attractive old building to the rear of the restauran

Young chef Maximilian Grüner's cuisine stays close to nature – his dishes take their cue from what the region and the seasons have to offer, and are served à la carte and in the form of a four- to six-course set menu. Among his appetising dishes are a potato and wild garlic soup served with baked egg and Jerusalem artichokes, and Schlutzkrapfen>/i> (Tyrolean ravioli) with cranberries, Gruyère and beetroot. The owner and her friendly, attentive team run the show front of house. Located in the eponymous hotel, which boasts a central location close to the ski slopes and attractive, cosy guestroom
