In both, Sergey shows off his remarkable knife skills, preparing a refined omakase experience that blends high-quality Norwegian ingredients with impeccable Japanese techniques. Larger than life chef-owner Christopher Haatuft passionately oversees the whole place, both serving dishes and engaging with guests – and while it’s certainly a smart place, the atmosphere remains pleasingly relaxed thanks to his cheery nature. Dishes are informed by Norwegian produce and recipes, with an added modern touch; you’ll find the likes of bluefin tuna crudo with beetroot, tiger’s milk, horseradish and phytoplankton oil.
