Asian Influences · ★ Michelin

Steven Klein Nijenhuis's commitment to sustainability is apparent as soon as you enter his restaurant. He no longer serves dairy, beef or pork; instead, he lays the focus squarely on vegetables and fruit. His creativity and penchant for working with Asian ingredients make for dishes that are full of surprises and frequently have an unusual umami twist. Techniques such as pickling and the subtle use of seasonings such as sambal give local ingredients an extra dimension. He incorporates locally foraged lion's mane mushroom, for instance, into an intensely flavoursome dish with onion dashi, ferme

Having sold De Loohoeve, Marleen and Jeroen Brouwer moved a little further north to Groningen, where they have given the Theresiakapel a facelift. The simplicity of the chapel has been preserved, as have the beautiful stained-glass windows, which are now complemented by a stylish interior design. This is no run-of-the-mill restaurant: upon entering, you are led through the state-of-the-art kitchen. The two chefs have joined forces in the kitchen to better express their creativity. It was already clear that their originality and sense of inventiveness knew no bounds, and here at Noor they conti

Janick and Leonie Niemeijer's light and airy restaurant is lively, yet has a distinctly natural and serene feel to it. The couple have put together an extensive à la carte menu and take great pride in their garden, from which they source vegetables and honey, among other produce. These are showcased in creative dishes that often incorporate a nod to Dutch culinary tradition. For instance, the chef glazes locally farmed duck in honey from his own apiary and roasts it to a perfect medium-rare. He serves it with various textures of kale, a sauerkraut jus, red cabbage compote, purée of Oudwijker F

Jilt Cazemier is certainly close to his suppliers: as you make your way to his restaurant, you will even spot the grazing lambs. A champion of local produce, he showcases its quality with consummate skill. When he prepares that locally raised lamb, he utilises the whole animal, from nose to tail. The depth of flavour of his main ingredient is enhanced by his intense sauces. His refined technique is evident in every dish, his playful garnishes providing refreshing contrasts. For example, he elevates lobster with a blend of salty herbs, a carrot puree with a bright orange flavour, a rich lobster

The charm of the converted Hunsingo windmill (1855) is as captivating as this picturesque village, and it houses a really special restaurant. Chef Kooijker works only with a surprise menu in which he brings to bear all his creativity, paying special attention to the presentation, creating elaborate garnishes and giving a new perspective on familiar flavours. Rest assured, you are in good hands here. And why not treat yourself to an overnight stay in the mill or granary?

A stone's throw from the sea, the restaurant in the small boutique hotel of the same name is impressive in several respects. Inside the smart brick building, the interior design is tasteful and modern, with a visible kitchen and gorgeous views towards the North Sea – the lovely seaside terrace is particularly inviting. Adding to the appeal is Markus Kebschull's wonderful cooking. His style is classic in its foundations, with skilfully incorporated modern influences and a strong emphasis on high-quality seasonal produce. There are two set menus (one of them vegetarian) comprising three to six c

Bistro Refter

Roelfien Steen and Cor Klevering's cosy bistro is a firm favourite. Don't expect creative excesses here, just authentic classic fare cooked up by an experienced chef; he draws much of his inspiration from French cuisine but also likes to express his love for Mediterranean flavours. This is the kind of place where you can feast on an intense bouillabaisse and a choice cut of meat with a bearnaise sauce prepared in time-honoured tradition.
