Chef Frédéric Bolis finds his inspiration in purebred French classics, to which he is not averse to adding a generous modern spin. This trendy, stylish establishment is now the lair of chef Julien Malaisse who has added a wealth of nuances and high-flying precision to the culinary lineup. A single set menu guarantees maximum freshness, as the deftly crafted dishes illustrate. The chef uses honest, hearty ingredients which he aims to subtly enhance. Marinated salmon trout is quickly grilled, before he adds a zest of lemon, pairing it with kiwi sorbet, fresh fennel and a subtle aniseed-flavoured creamy sauce. Vibrant, punchy cuisine courtesy of deft, delicate craftsmanship.
