Quintessentially Apulian restaurant, beginning with its ambiance: a sequence of rooms excavated within the rock of ancient Aragonese walls. The cuisine is equally inspired by local traditions, encompassing cardoncelli mushrooms, burnt wheat orecchiette, and cheeses from the Murgia hills, to name a few, with almost exclusively meat dishes along with vegetarian options and delightful sweets.

An extraordinary representation of rural Apulia, here you will find one of the region's gastronomic excellences. The array of mainly vegetable starters, the fresh pastas combined with extraordinary ragùs, the fabulous meats (especially the capocollo and sausage) and the desserts (especially the “quasi cassata”) live up to the name the restaurant has built up since opening in 1993. In the maze of picturesque alleys of the historic center, housed in a 16th-century building with an elongated dining room under a vaulted stone ceiling, are a few tables and a fireplace. This is Angelo Sabatelli's niche, featuring his refined cuisine woven with Apulian inspirations and personal creativity. In the dining room, his son Daniele, an excellent sommelier, will guide you through one of the most extraordinary wine cellars in the region, spanning two volumes with approximately three thousand labels.

Set within the evocative surroundings of a fourteenth-century masseria, nestled within a park of centuries-old trees, this venue presents one of the most interesting gastronomic experiences in the Puglian countryside near Polignano. At the time of our visit, the menu takes the form of a single tasting menu available in five or seven courses, through which Michele Spadaro interprets the flavours of regional tradition with creative verve. We are told that a more accessible option for the interior dining room is also forthcoming, designed for guests spending longer in this setting of great allure

In the heart of the historic center, this charming restaurant welcomes guests between a cool outdoor terrace and an evocative dining room created in a natural cave. The cuisine celebrates local traditions, with occasional forays into seafood. In the evening, the offering also includes pizzas, made with three different doughs: the classic Neapolitan, the thin and crispy “Papà Luigi”, and the one with vegetable charcoal. Surrounding the restaurant, simply furnished yet well-maintained guest rooms in the style of a scattered hotel complete the experience.
