Langoustine, blue lobster, pigeon royal and turbot are carefully prepared, and Mediterranean flavours can be detected in the beef tartare with confit tomatoes, lovage mayonnaise and tomato sorbet, or in the courgette flower tempura stuffed with sheep's yoghurt and piquillo pepper sauce.
