LÚ Cocina y Alma
Modern Cuisine · ★★ Michelin

Chef Juanlu Fernández, a fan of slow cooking, defines his style as 'rearguard avant-garde', an expression that highlights his personal, somewhat crazy interpretation of cooking which is based around classic French cuisine but which also showcases the best Andalucian ingredients, with stews and traditional recipes. In his attractive restaurant, designed by architect Jean Porsche, he aims to personalise the experience by involving guests in the creative process (the kitchen is visible from the dining room) through two tasting menus offering different sensations: 'Duxende' (9 courses), which is de

Some people call Ronda the “city of dreams”. But without drifting off into reverie, we are indeed talking about one of the most beautiful towns in Andalucia, where Bardal, not far from the impressive bridge over El Tajo de Ronda, is now a flagship of the local restaurant scene. Here, chef Benito Gómez, a Catalan by birth who has made the region his home, cooks up creative cuisine, steering clear of gimmickry and labels, while the recognisable flavours in his cooking have a connection to local tradition and are transformed into a subtle interplay of contrasts and textures. Diners are given a ch

Mantúa
Modern Cuisine · ★ Michelin
€€€€
A restaurant whose name is a play on the history of local viticulture, Mantúa has a minimalist feel and its own personality thanks to the emphasis placed on offering guests an array of unique and different sensations on what is described here as ‘a different journey across our terroir’.Here, chef Israel Ramos creates contemporary cuisine that encapsulates Andalucía and, above all, Jerez, respecting the region’s flavours with imagination, highly refined textures and delicate presentations. The proposal, which comes in the form of a small à la carte/set menu (you must choose four dishes) and ano

This village in the heart of the Serranía de Ronda could be described as the archetypal picture-postcard “pueblo blanco” given its setting nestling between mountains and its swathe of whitewashed houses. Run by a Dutch couple (Hellen Blott and Barry Smit, the latter in the kitchen), the restaurant is a vision of perfection with its rustic ambience providing a backdrop for international cuisine that has taken a much more traditional twist (such as in the smoked ajoblanco with Payoyo cheese, olives and anchovies), but always based around the very best local and seasonal products (chestnuts, cher

La Tarara is one of those restaurants where, having worked in renowned restaurants around Spain, its owners decided to return to their home region to start this highly personal project. Fronting a square in the centre of town, the restaurant boasts a pleasantly surprising contemporary feel along with a few unusual decorative details such as verses from La Tarara by Federico García Lorca (the children’s song from which it takes its name) adorning the walls. The cuisine here is an updated version of traditional Andalucian dishes, in which almost all the ingredients are sourced locally or from th

Deli
Traditional Cuisine

A love of cooking with its roots in tradition is behind the values of this restaurant with its impressive array of rice dishes, soups, stews, and specialities such as Segovia-style roast suckling pig. Now run by the third generation of the family, Deli always works with local producers to source its ingredients, focusing on the traditional cooking of inland Andalucia, with some recipes on the menu harking back to the region’s long period of Moorish rule. Specialities here include partridge mousse with an Oloroso sherry gelée, wild seasonal mushrooms, roast shoulder of suckling lamb and the alw

Sarmiento Brasa Andaluza
Traditional Cuisine
€€
Fancy a visit to a typical 'white village'? Casares, in the province of Malaga, is a great option and this restaurant, located at the top of a hill, boasts wonderful terraces, with the best views to contemplate while you enjoy good traditional cuisine. The brothers at the helm, Juan Diego and Miguel, have updated the charming family home to offer a menu that is varied but not lacking identity, as the focus here is clearly on grilled meats (especially young Malaga goat, although they also have a variety of matured cuts). Bina Bar
Traditional Cuisine
€€
Behind the term Bina, which is a reference to the viticultural work to oxygenate the soil of the vineyards and rid them of weeds, is chef Juanlu Fernández’s more informal dining space, the man at the head of the two-star LÚ Cocina y Alma. Here, in the area known as the Torres de Córdoba (about 10 minutes from the centre), you will find a modern restaurant that oozes the essence of Jerez, with many dishes inherited from the old gastronomic restaurant, a good selection of stews and dishes that reinterpret both Andalusian cuisine and recipes from further afield (especially Colombia, a nod to his
