Located in Nova Gorica, slightly off the beaten track and a few kilometres from the centre, the restaurant welcomes guests into an urban-chic setting. You will be captivated by the relaxed atmosphere, pleasant music and a modern, reassuring culinary experience. No special effects here, just a balanced and sensitive indulgence for the palate. Among the dishes we sampled, the seafood rice with the fragrant aroma of oysters was undoubtedly our favourite: intense yet delicate, the smell alone evoked the sea breeze. Chef Uroš Fakuč is a constant presence in the dining room, personally overseeing th

Situated on a small hill just outside Vipava, this elegant restaurant – in business for over fifty years – occupies a seventeenth-century residence that once belonged to a family of Venetian nobility. The interiors unfold across several rooms, each with its own distinct personality: particularly evocative are the stone spaces obtained from the original stables and kitchens of the historic residence. An enchanting dining room with a fireplace is the setting for a refined cuisine, where traditionally inspired dishes coexist with more creative and experimental proposals. Under the guidance of Tom

A historic and rightly famous restaurant. The same family – now in its sixth generation – has been celebrating the flavours of the region since 1870, just a stone's throw from the Slovenian border, where traditions and aromas blend seamlessly together. Authentic emotions are brought to the table: Palatschinke lasagne with mushrooms and pumpkin béchamel sauce, veal tripe à la Carsolina flavoured with bay leaves and pecorino cheese, and the traditional “Kraško pecivo”, a soft cake with raisins and walnuts, accompanied by cinnamon ice cream. The wine cellar, lovingly curated by the owner, boasts

If you don’t have the opportunity to stay in Štanjel (something that we highly recommend so that you can immerse yourself in the atmosphere of this charming medieval village), we suggest arriving at this restaurant at least an hour before your meal in order to enjoy a stroll through the narrow streets to the Fabiani Gardens, which boast fine views of the surrounding mountains. You might like to start your meal with a local aperitif – a glass of Teran wine produced using traditional methods by the Jazbec winery would be the perfect choice. Whether you have lunch or dinner here, the cuisine is r

Since 1937, Casa Špacapan has been a point of reference for the cuisine of the Karst. Today, under the direction of Ago Špacapan, the offering is renewed in the spirit of quality and territory. The kitchen celebrates local produce, much of it from their own production: charcuterie and cheeses aged in the cellar, estate wines (Teran, Rebula, Malvazija…), vegetables from the kitchen garden, and ingredients from trusted small suppliers. The dishes tell the story of the Karst, with specialities such as roast lamb or kid and ravioli filled with fresh cow’s curd. Alongside the à la carte and tasting

Restavracija Calypso

In the Slovenian part of Gorizia, within the Perla Resort & Entertainment – a vast leisure complex encompassing hotels, a casino and restaurants – Restavracija Calypso is particularly appreciated for its seafood cooking. The dishes, often presented directly in the dining room, celebrate fresh Adriatic catch through predominantly classical preparations, from raw dishes to oven-roasted fish. Alongside the seafood, references to the hinterland are not lacking, with various specialities from the surrounding regions.
