Haricot is a venture started by three friends. Having worked together at De Librije, they have now set up shop in the heart of Maastricht. In a cosy wood-panelled restaurant with a French feel, diners are served a single set menu in which the chefs demonstrate their mastery of the art of omission. Our inspectors were particularly taken with the pearly white skrei ballotine with sautéed and marinated oyster mushroom and deep-fried kale, finished with a spicy beurre blanc emulsion for added character. Once a traditional café, this place is now a no-nonsense bistro, complete with upbeat background music. Bar Beurre certainly lives up to its name. Just like in traditional French cooking, butter (beurre) is a key ingredient here, but this cuisine is not at all lacking in sophistication. For example, the chef uses it to prepare megrim à la meunière, which he serves with anchovies, broad beans and an exquisite beurre blanc finished with a dash of sherry.
