Like his forebears, the chef concocts gutsy, wholesome recipes: presskopf and horseradish sauce, choucroute of smoked pork shank with potatoes, zander quenelles and matelote sauce... The friendly service is by the chef’s daughter and the traditional winstub interior proves that some things never go out of fashion!
