Chef Nicolás Machín, who is known to everyone as Colacho, creates an up-to-date take on traditional cooking that is always built around ingredients from the island (the restaurant also has its own vegetable garden) and is showcased on a single tasting menu. Dishes that you’ll find on the menu that we particularly enjoyed for their flavour included the loin of cherne fish with vegetable pisto and creamy potatoes with thyme.
