This intimate and romantic restaurant occupies an old 19C farmhouse situated in a tiny hamlet in the Cembra valley. In the softly-lit dining rooms, chef Mara Fronza serves just one tasting menu which changes every month (guests have the choice of the main menu or a shorter version if they prefer) and showcases Italian dishes with obvious regional influences, especially in the seasonal ingredients used, all prepared with a modern twist. Opened by three brothers (Augurio is the family name), this restaurant in the city centre successfully combines the traditional and the modern in both its cuisine and its decor. The dining room, with an open-view kitchen on the ground floor, boasts an old, vaulted ceiling, while its wood furniture adds a contemporary look. The menu features local and Italian dishes reinterpreted with flavour and style. Lighter options are available at lunchtime; the grande carte needs to be ordered ahead of time.

Situated at the entrance to the pedestrian section of the beautiful city of Trento, this intimate restaurant has a modern, minimalist and vaguely Nordic style, with just a few solid wood tables and stools of different sizes. The cuisine – reliable, seasonal and full of flavour – is traditionally Italian, yet with a contemporary touch. The menu also features a few regional options as well as the occasional fish dish. The quail stuffed with acacia honey, pumpkin purée and stewed radicchio is superb.

This small, intimate restaurant next to the elegant Palazzo Roccabruna in the historic centre is slightly off the beaten track despite its central location. Recently opened by the Poletti brothers (one in the kitchen, the other front of house), with an attractive dining room designed by the owners’ father, the restaurant serves top-quality ingredients (especially fish and seafood) in dishes which include modern influences (the mango cheesecake is delicious) and a pleasing classic appeal (raw fish dishes).

In the city’s elegant drawing-room quarter, amid the striking palazzi of the historic center, the same refined atmosphere pervades the restaurant’s dining rooms. Seafood plays a minor role here; instead, the kitchen embraces regional specialties such as canederli, polenta, freshwater fish, roasted meats, and, naturally, strudel.

This beautiful Stube-style restaurant in the city centre has existed since the Council of Trent, with a succession of chefs and owners serving food here ever since the 16C. Still run with skill and expertise today, the restaurant boasts a small, intimate Alpine-style dining room where Trento specialities (char, apple strudel with vanilla ice cream) are served alongside typical Italian fare (risotto with mussel power and parsley pesto). All the dishes are cooked with an imaginative touch, resulting in a perfect balance of tradition and modernity!
