The experience unfolds over 13 small, distinctive courses, far removed from the mainstream and typically centred on a single star ingredient, which forms the basis of the menu. A memorable example is the "kimchi börek", in which aromatic sika venison meets vibrant, tangy kimchi, elevated by fine shavings of Périgord truffle. The setting is chic, modern and relaxed.
