Raíces-Carlos Maldonado

Chef Carlos Maldonado knows no limits and it is this which characterises his cooking, which is firmly steeped in the flavours and ingredients of La Mancha but which is also open to influences from around the world, as witnessed by the twinning between his beloved Talavera de la Reina and Puebla (Mexico). The restaurant, which could almost pass unnoticed because of its discreet façade, boasts a classic-contemporary decor in varying tones of white, plus an adjoining dining room with curtains hanging from the ceiling that add a more intimate feel to the tables. On the banks of the Alardos gorge, restoring a mill that exudes pure authenticity, with stone walls, this establishment is a tribute to peace and quiet. There is a good bar area at the entrance (with a fireplace and curious-looking tables that reuse old millstones) as well as a simple dining room, both spaces with a warm rustic feel. What’s on offer? A bistro-style menu (starter and main course only) as well as a surprise tasting menu with clear traditional foundations and a modern touch, and a commitment to fresh vegetables from the area. Try the natural wines from small producers!

Offering traditional cuisine brought up to date that draws from the recipes of Castile-La Mancha and Andalusia, in this cosy restaurant in Talavera, next to the Parque del Cañillo, chef Piedad Sánchez concocts a menu with nods to both La Mancha and her native Malaga, giving us the option of a journey through the flavours of both regions through its set menus: the one called Ejecutivo (only available at lunchtime from Tuesday to Friday) and another one called Gastronómico. You'll find dishes such as semi-liquid mushroom and truffle croquettes, candied and grilled artichokes with seasonal vegeta

Los Trujis

Located in a central residential area, this family-run restaurant will pleasantly surprise guests thanks to the efforts of the Trujillo brothers (with David in charge of front of house, and Pedro in the kitchen) who showcase their creativity through dishes teeming with local flavour and tradition. The menu, which includes several dishes inspired by the world of hunting, begins with a selection of small bites and several dishes designed for sharing. Don't miss their creamy, award-winning Manchego cheesecake!

La Mira de Gredos
Traditional Cuisine
€€
Found on the first floor of the hotel La Mira de Gredos, this restaurant is furnished with a large windowed room, to marvel at the Sierra de Gredos as you eat. Out of the kitchen comes an updated traditional cuisine, with a choice of à la carte service and one tasting menu. Dishes not to be missed? Try the popular Patatas revolconas, with paprika from La Vera and pork crackling, or the very tasty white bean stew from El Barco with its traditional sacramentos (cured meats and sausages).

This simple family-run business, named after the initials of the owners (including their daughter), is a great place to eat if you are visiting the Álvarez de Toledo Castle, home to the first Parador located in a historic building. You'll find a traditional menu with innovative touches, carefully prepared and full of flavour. Our recommendations? The house classic: matured beef ravioli in wonton pasta and truffle cream.
