Cocina de Autor Riviera Maya
Creative, Mexican · ★ Michelin

Once inside the opulence of the Grand Velas resort, guests are treated to an indulgent, immersive experience encompassing stunning ocean views, assiduous service, and, of course, singular cuisine. As its name indicates, the cooking here is driven by the creative vision of Chef Nahúm Velasco, who delivers a sophisticated tasting menu that emphasizes novel combinations and compelling textures. A meal might progress from spider crab paired with silky jackfruit, to smoked bacon with tuna, or perhaps a foam of Jerusalem artichoke with huitlacoche and mushrooms. The menu changes regularly with ample

Acclaimed Chef Curtis Stone lends his name and refined culinary sensibilities to this seaside retreat, and though he’s unlikely to be present in the flesh, rest assured that you are in good hands regardless. As the first step into the smoke-perfumed room will give away, the cooking here centers around live fire, with a charcoal oven and wood-fired grill lending their aroma to a small menu that leans to bold simplicity. Local seafood and well-marbled steaks from Oklahoma make up the mains, while sides like crunchy potato pavé with jocoque and buttery Parisian gnocchi with endive and poblano are

You’ll have an excellent vantage to see the nearby shore from this second-floor perch, whose thatched roof and open-air plan allow the welcome ocean breeze to circulate. Better still, you can enjoy the view alongside a bountiful menu of memorable seafood offerings and tropically inflected cocktails. Shareable starters include puffy gorditas filled with roasted octopus, salsa verde, and melty quesillo, as well as an assortment of vibrant and inventive ceviches and aguachiles. Mains are likewise not boxed in by tradition, with typical Mexican flavors alongside the likes of Provençal butter and h

A journey through the jungle, past the private villas that make up the Chablé Maroma, will bring you to this enclave, serving singular cuisine that celebrates native ingredients and flavors. To that effect, sophisticated permutations of corn, beans, and chiles are threaded through the menu, as in a pickled Venison with crispy potato straws and a tableside pour of recado rojo. A main course of luxurious creamy rice — enriched with Ocosingo cheese and accented with nutty, herbaceous pipián verde alongside earthy venison longaniza — offers an unapologetically Mexican answer to risotto. Located inside the stylish and meticulously groomed The Riviera Maya EDITION at Kanai, this breezy oasis features verdant views as well as pools of water that flow gently alongside the restaurant and all through the property. Sourcing ingredients from across Mexico, the kitchen delivers familiar dishes with unexpected inspiration. Tlayudas arrive smeared in artichoke puree and topped with tuna and Serrano peppers. Lamb is charred to the hilt and paired with guacamole garnished with pistachios and cocoa nibs. A dark chocolate tamale sings with passion fruit sorbet and crispy hoja Santa. Friendl

Here in the Riviera Maya, Axiote Cocina de Mexico offers a tight selection of familiar Yucatan dishes prepared with modern touches. Carefully presented, the generously portioned plates are compelling, starting with a selection of fiery salsas that do not hold back on heat. The likes of tostadas de mais azul or guacamole with chapulines (grasshoppers) make for good starts. Fork-tender birria de cordero is a stand-out entrée but do save room for dessert. From coconut cream with passion fruit to mango with honey, orange foam and cocoa, the sweets here are a surefire strength. While not necessary,
