After stints at various MICHELIN-starred establishments, Yann Bosshammer now oversees a kitchen dedicated to modern, seasonally inspired dishes crafted from premium regional produce, such as "grilled salsify, quince, black garlic" or "Albbruck brook trout, tonka bean, pear".
