The traditional Parkhotel Adler, which has been a family-run business for over 500 years, is home to this historical Black Forest establishment whose origins date back to 1639. It has five really pleasant dining areas, from the charming "Stube" with its old wood panelling and a low ceiling, to the chic "Bergkristall", and of course the terrace. The cuisine comprises Baden and international dishes; vegetarian options are also available. The wine list features a good selection of wines from the region. Affording magnificent views of the lake, the terrace beckons in summer. The menu takes its cue from the seasons and includes dishes such as Black Forest trout fillets with pickled cherry tomatoes, courgettes and parsley mashed potatoes or French corn-fed poularde breast, tender young beans and thyme pasta. Here, just outside St Märgen at an altitude of approx. 1 030m, a father-and-son team cook up quality seasonal fare, including local game, and classics such as maultaschen and schnitzel.
