If you’re looking to take a train trip outside the city, then this inconspicuous little restaurant opposite Tampere Central Station makes the perfect stop off. Regional and international ingredients come together in recipes that favour Asian techniques – like chawanmushi with peas and crayfish or sea buckthorn with lime leaf and Arctic cloudberry – and the superb stocks and sauces really show the depth of the kitchen’s skills. The chef is a very affable character, delivering his dishes and explaining their composition, while the young service team present some interesting wine pairings.
